Terry Black’s BBQ

I’ve been hankering (do people use that word anymore?) to get some decent BBQ in Texas. Had a terrible outing at Stubb’s in Austin, but everyone said to go to Terry Black’s, but that there would be lines, so I never made it there. Jeff and I were in Dallas for a meeting in the office and at lunch they had brought in some BBQ that was shockingly delicious, both the brisket and the pork ribs. Neither of us were concerned about eat BBQ twice in a day, so we went to Terry Black’s in Dallas (Jeff had been on a previous visit). We got there early enough so there wasn’t much of a line. It’s basically go to counter, ordered a bit of almost everything – brisket, pork ribs, sausage, turkey and a bunch of sides. The only thing we didn’t order was the beef ribs which we should have, but either way we had way more than we could eat, but we tried. Pork ribs were incredible. Beef brisket was not as good as the cut I had at lunch, but still good and better than I make. I did get a glimpse of their smoking setup and it is serious. Dang, no wonder everyone talks about Terry Black’s and I finally ate some decent Texas BBQ.
