Quince

Still one of our favorite restaurants in the city. We eat out most Thursdays and theoretically this was an early b-day meal for me. We usually eat early, but I did book this last minute so we had a 7:30 reservation. Service was definitely busy compared to our last time here in September for an early dinner. Great ingredients, preparation and technique. Fantastic meal and wine pairings (some interesting and unusual choices, but well paired) as always. We did the caviar supplement of course and I added the wagyu. The caviar presentation was excellent and the brioche was saturated with butter. We both agreed that our favorite course was the one with the porcini mushrooms and the ‘78 Barolo (that wine is almost as old as some of our friends…). Our favorite single ingredient was probably the morels in the white asparagus course; we’ve cooked with morels a good amount, but we actually don’t see it that often at restaurants (granted, it is only in season for a limited time each year). The meal was so very good, although I think I preferred our experience here last September, but then again we were coming off the pandemic and that made it all the more special and enjoyable. Regardless, we’ll be back!

I find foams tiresome. They are gimmicky and add little value to most dishes.
