Instead of waiting for some indeterminate “special occasion” to open up a bottle from our library, what better occasion than Friday night and a juicy 1.8lb bone in rib eye topped with sautéed mushrooms! Opus One’s web site says that the 2000 vintage is still a “hold” but it seemed like it had plenty enough age on it and amazingly it still had a decent amount of tannins in it.
