We’ve been roasting coffee for more than 15 years. It all started when this coffee shop in Windsor first showed us how you could roast beans with a hot air popcorn popper. I started with one of those from a garage sale from my neighbor, but soon upgraded to a Gene Cafe hot air roaster which I purchased from Sweet Marias. I also have been sourcing my beans from them ever since. We primarily purchase their beans sourced from Kenya, Rwanda, and Ethopia and occasionally some Guatemalen Gesha. I’ve been playing with roast levels. We don’t prefer the darker roast of the second wave coffee places like starbucks (blech!) or Peet’s or as light as the 3rd wave roasters, so a bit in between. Light enough of the brightness and fruitiness of the beans, but not so light that it’s too acidic.
I upgraded our grinder to a Fellow Ode Gen 2 earlier which has been great with a very consistent grind. This matches our Fellow Stagg electric water kettle. We steep our coffee in the Clever Dripper for 3 minutes to get enough extraction. It all makes for a delicious cup!
