Truffle day #2: we went French today… truffle soufflé with shaved truffle. Our Burgundy is a bit depleted in our wine collection so I had to go with a 2013 Louis Jadot from Beaune (which is where we would have been staying in Burgundy next month before the pandemic happened). soufflé is one of my favorite dishes, but it sure is filling even with all of that air!
