I had mentioned to Kristine how when I went to Chicago last year, I wasn’t able to come out to her place and that she had promised me some BBQ, so we were going to make up for lost time. Kristine had marinated a large brisket for awhile and started it up on her Kamado Joe (very nice…if I were buying another ceramic kamado style, I’d likely get one of these) the evening before. It had finished early overnight and Kristine had also realized that she had put it on upside down (fat side was down), but it was all good and turned out delicious and moist. Great job and it inspired me to do a brisket again which I haven’t done in forever.
