Ode to Truffles
In shadowed woods where secrets keep,
Beneath the earth, in whispers deep,
The truffle lies, a treasure rare,
Perfumed ghost of forest air.
Black Périgord, with scent so bold,
An earthy musk of roots untold,
Notes of soil and darkened rain,
A fleeting kiss of autumn’s stain.
White Alba, pale and ivory bright,
A siren’s call of pure delight,
Garlic, honey, hay, and sun,
A fragrant spell that’s never done.
Oh, truffles dear, you haunt the air,
A wild perfume beyond compare,
To taste you is to lose control,
A heady dance of scent and soul.
Below are some photos from our dining experiences, truffle hunting and white truffle festival. Truffles are highly perishable with ever day they dry out just a bit more than after about a week, they are pretty much dead. When you know how fragrant fresh truffles are, it’s pretty easy to identify ones that are no longer any good based on the aroma when dining out. Sadly, we sometimes find restaurants have truffles that are not fresh at all, even some very highly regarded ones. Caveat emptor.
Ever since we did the truffle hunt in Provence at Les Pastras, we’ve been ordering truffles at home. When we order them, we plan all of our meals around it. Over time, we’ve been buying more and currently order 300g at a time and can be crazy excessive with the amount of truffle we use when on our cooking.T
